&lt;p&gt;&lt;p&gt;As a nutrition professor, I am constantly asked why nutrition advice changes so much and why experts so often disagree.&amp;nbsp; Whose information, people ask me, can we trust? I&amp;rsquo;m always tempted to say, &amp;ldquo;Mine, of course,&amp;rdquo; but I understand the problem.&amp;nbsp; Yes, nutrition advice is complicated by scientific arguments, the vested interests of food companies, and compromised government regulations.&amp;nbsp; But basic dietary advice has been the same for 50 years and is not in dispute.&amp;nbsp; I summarize it as &amp;ldquo;eat less; move more; eat fruits, vegetables and whole grains; and avoid too much junk food.&amp;rdquo;&amp;nbsp; Michael Pollan says the same thing more succinctly: &amp;ldquo;Eat food.&amp;nbsp; Not too much.&amp;nbsp; Mostly plants.&amp;rdquo;&lt;br /&gt;&lt;br /&gt;If dietary advice seems more complicated than that, it is surely because of the effects of rising rates of obesity on food companies.&amp;nbsp; Food companies must sell products to stay in business; they must promote &amp;ldquo;eat more.&amp;rdquo;&amp;nbsp; But obesity is the most important public health nutrition problem these days, and the solution to obesity is to &amp;ldquo;eat less.&amp;rdquo;&amp;nbsp; This puts public health in conflict with food company business needs.&amp;nbsp; &lt;/p&gt;&lt;/p&gt;

For the first time in decades, the life expectancy of children born in this century is actually lower than their parents. What&amp;#39;s the number one culprit in this crisis? Food. Meanwhile, food safety is spotty. The U.S. lacks a comprehensive &amp;quot;farm to table&amp;quot; food inspection process. That&amp;#39;s why the &lt;a href="http://www.cdc.gov/ncidod/dbmd/diseaseinfo/foodborneinfections_g.htm"&gt;Centers for Disease Control estimates&lt;/a&gt; there are 76 million cases of food borne illness each year!&lt;br /&gt; &lt;br /&gt; What we eat is making us sick! &lt;p&gt;Marion Nestle, NYU Professor of Nutrition and author of Food Politics, Safe Food, and What to Eat, gives a talk entitled What to Eat: Personal Responsibility or Social Responsibility.&lt;/p&gt;

&lt;p&gt;Nestle discusses the U.S. food system including supermarket strategies. She informs and advises the audience at the Chautauqua Institution's 2008 program about what and how to eat.&lt;/p&gt;

&lt;p&gt;Marion Nestle is Paulette Goddard Professor in the Department of Nutrition, Food Studies, and Public Health at New York University, which she chaired from 1988-2003. Her degrees include a Ph.D. in molecular biology and an M.P.H. in public health nutrition, both from the University of California, Berkeley.&lt;/p&gt;

I've heard you talk and I agree a lot with what you said, how would you work with whoever became the president?"&lt;/p&gt;

&lt;p&gt;JOHN MCCAIN: ". . . One of the most alarming statistics in America today is the increase of obesity, high blood pressure, and diabetes amongst young Americans. There is no health care system in the world that can sustain the cost of a continued increase in those, just those three aspects of America's health . . . It's impossible to reduce the cost of health care in America if that's the case. But more importantly we are, as we have seen through many, many years, and maybe centuries, an increase in the life span of Americans that could level off because of the health and wellness of another generation of Americans. Um, I would like to see everything ranging from insurance companies rewarding their clients for wellness and fitness to employers rewarding their employees if they join a health club . . . young Americans . . . really look up to . . . our great athletes. And I'd love to see my friend, Shaquille O'Neal, who just finished the playoffs last night . . . he inaugurated a program in Miami . . . called "Shaq's Challenge." And I had at Miami Children's Hospital a chance to meet a young man who had lost 76 pounds who had taken up Shaq's challenge . . . Smoking. My friends, I smoked for a long time. It used to be the thing that Navy pilots did, it was part of our sort of image . . . Smoking is really, really unfortunate . . . We have taxes on cigarettes today and that money, instead of going to programs to disincentivize young Americans to smoke . . . it's general revenues. And it was supposed to go . . . to these programs and it's not . . . So, wellness and fitness, wellness and fitness."&lt;/p&gt;

&lt;p&gt;JOHN MCCAIN: . . . there are many things that I did not cover in my opening comments . . . one of the most alarming statistics is the rise amongst young people of obesity, high blood pressure and diabetes. No health care system in the world can sustain an increase in that amongst young people. We have to emphasis wellness and fitness, ranging from insurance policies that reward people . . . and by the way we can certainly put their medical records online, if they wish to they can show those medical records to their insurer. We also, obviously need to encourage simple things like membership in a health club, cash rewards back to the employees for employees that have practiced the wellness and fitness habits . . . I also want to mention one other thing that sounds a little, maybe, na&#239;ve but I think it's effective. At Miami Children's Hospital I met a young man who had lost 76 pounds by dieting and exercise. And the motivation for that young man to do that was a thing called Shaq's challenge. Shaquille O'Neal had engaged in a program where Shaq challenged young people to get back into shape . . . I'd like to ask every athlete in America that is famous and doing well to go around to our schools all over America . . . I think every parent should know the school lunch program at their school, I think every parent should know the physical education program that is at each of these schools and we've got to make young people understand that wellness and fitness is directly related to their future and their longevity in this great nation. So I think we need to put in a lot of incentives from insurance point of view . . . but I would also like to see us do a better job of motivating young Americans&lt;/p&gt;
